Cajun Barbequed Ribs cooked by Lou Barrale

Cajun BBQ Spice Rub:

  • 1/4 cup Kosher salt
  • 2 Tablespoons paprika
  • 2 Tablespoons garlic powder
  • 1 Tablespoon black pepper
  • 1 Tablespoon onion powder
  • 1 Tablespoon cayenne pepper
  • 1 Tablespoon dried oregano
  • 1 Tablespoon dried thyme
  • 2 Tablespoons chili powder
  • 2 Tablespoons brown sugar

Preparation:

Add all ingredients to a mixing bowl.  Combine ingredients well then sift through a sieve into another bowl.  Discard the spice particles that will not pass through the sieve.

Rub your meat with this seasoning mixture for a unique cajun BBQ flavor.  Great on beef brisket, chicken or pork.

Cajun Crab Boil Spice Recipe:

  • 1/4 cup pickling spices
  • 1/4 cup Kosher salt
  • 2 Tablespoons mustard seeds
  • 2 Tablespoons whole black peppercorns
  • 2 Tablespoons hot red pepper flakes
  • 1 Tablespoon celery seeds
  • 1 teaspoon cayenne pepper
  • 2 teaspoons ground ginger
  • 2 teaspoons dried oregano
  • 5 bay leaves

Preparation:

Add pickling spices, Kosher salt, mustard seeds, peppercorns, red pepper flakes, celery seeds, oregano, and bay leaves to the bowl of a food processor fitted with the metal blade. Pulsing, process until the mixture forms a coarse powder.  Add the cayenne pepper and ground ginger and mix well.

Add to boiling water and cook to give your seafood boil a spicy kick!
